Chicken breast with Pitboss Sweet Heat rub, salt, and pepper. Sear on both sides in a hot pan with olive oil, then throw in the oven at 350 for 20 minutes. Very tender and juicy. Asparagus lay flat on sheet pan, spray with olive oil spray and dust with the sweet heat rub. Then cover in shredded cheddar cheese and throw it in the oven at 350 when the chicken has 15 minutes left. Take out chicken and finish off the asparagus at broil 500 degrees to crisp up the cheese.

Top with whatever you want or eat it as is. I use some home made bbq sauce on the chicken and ranch & chopped cilantro on the asparagus.

I had a great asparagus patch just up the road from you Bill. Westpark at Hwy 6. Black clay of course. I dug a trench about three feet deep and filled it with composting manure. Then I built it up with a double stack of RR ties and filled it with more manure. I planted three year old Martha Washington roots about three feet deep. They produced immediately. I had big thumb sized spears come up every day the second year. After you’re tired of asparagus, just let them grow until they go to seed. That feeds the roots so they do better next year.

Fresh cut asparagus is delicious raw in a salad.
