Saw Wagyu sirloin at HEB this morning. Anybody tried it? It looked really lean.

Probably is American Wagyu. Wagyu doesn't have to be prime. If it looks lean it's most likely overpriced marketing hype. Buy what looks good to you.

I thought sirloin was naturally lean, compared to other steak cuts. Such as ribeye, NY strip.

It is a leaner cut. There just isn't any difference in grade with a Wagyu and say an Angus. Grade is grade. It's when you get up into the ultra prime grades (A5) that you find a difference in Wagyu vs other breeds. Some breeds just won.t get there with a high yield. I've fed out Holsteins that turned out great (high end choice), but it's not you best yielding animal. You wind up paying for hype for Wagyu a lot of the time. I had a few Wagyu at one time. It's all about how they are fed. Otherwise, they're just another beef cow IMO. Just buy what looks good to you. I used to buy A5 Wagyu back when it was not so ridiculously priced and it is absolutely wonderful. I'm just not going to pay over $100 for a single steak.
