We’ve got three family coming in this evening from Houston. My big sister, my god nephew and his GF. My sister and as far as I know, the kids too have never had venison. So, mum’s the word!

I pulled two packs of WT stew meat and half a beef Chuck roast from the freezer yesterday. I cleaned and cubed the venison and that chuck will be cubed up next. I’ve got a pot of beef broth simmering. After the meat simmers all day, I’m betting they can’t tell the difference.



Ok, it’s all cubed and resting in Fiesta fajita seasoning. Later, I’ll toss it in seasoned flour and brown it in lard. Then, I’ll use the drippings with more lard and the left over seasoned flour to make a roux of sorts to thicken the broth.



I chopped the veggies yesterday so I’m about ready to get it simmering. The potatoes are bagged In water to keep them from turning brown on me.

Ok the lard is starting to smoke. Time to brown the meat.



That’s brown enough. I put the lid on the DO, turned off the heat, and it’s finishing up, stewing in its own juices.

I used Tone’s beef broth and seasoned it up. I forgot that I had bone broth. Duh.

The tree slice board? That’s my traveling board. It’s sitting on a custom made thick end grain board that’s pretty nice too. That one don’t move. Too heavy.

Are there places set at the table for all of us?

How do you clean that cutting board?

Does it have the bark on the edges still?

I just rinse it good and wipe it down. Yes, the bark is still tight. I try to stay away from the edge/bark when I’m working.

I absolutely love a good stew.
That looks like it’s going to be a good one!
But I don’t see tomatoes.

Let’s pull the meat and make a stew roux.

Add lard to the drippings -



Add flour and stir over high heat -



Stir stir stir until you get the desired color -



Throw the veggies in (except the potatoes) -



When the veggies start to change color, it’s time to slowly add the beef broth -



Now it’s starting to look like stew -



Add the potatoes, top off with simmering beef broth, and after several hours, you got something yummie.



Don’t be in a hurry to correct the seasoning as it’ll taste different after it simmers.

Yeah, no tomatoes in my stew or my chili. I’ll serve it with a tomato cucumber salad and fresh corn bread.

Mama won’t let me add anything to it now. She’s loving it and the veggies aren’t fully cooked yet.

They ate the heck out of it. Sis figured it out early, said it was great. There are three new venison eaters today.
