I didn't want to spend the day and half the night on a full brisket so I got 2 chuck roasts and cooked them just like I would a brisket. Same seasoning and cooking temps before cutting them into burnt ends. Back on the smoker for about an hour and if I didn't know it wasn't a brisket, I'd swear they were brisket burnt ends. They literally just melt in your mouth. 5 hours total cook time.

I rubbed both with Angelo's beef rub and let sit for about an hour. Ran them in the smoker at 225-275 for 4 hours until the internal temp was 205. I cut them into chunks, a little more rub, slathered on some Head Country spicy sauce and about a cup of beef broth in the bottom of the pan. Back on the smoker for another hour and done. All the broth evaporated but kept them juicy. Offset Bandera cabinet smoker using hickory and pecan wood.
