I’ve got a pound of them soaking. They’re called yellow beans too I think. They show up in Mexican kitchens, but I’ve never come across them. This will be my first experience cooking and eating them. Anybody know anything about them?

They turned out great. They look like Great Northern beans but make a thicker broth. They’re a creamy type of bean. I soaked them overnight and rinsed them well this morning before putting them over low heat with a ham shank. I seasoned to taste with salt, pepper and sugar. They doubled in size almost immediately and absorbed almost all the water, I added about a quart to let them finish cooking.

We started eating them about 10:00 this morning. I only cooked a pound of them so they’re pretty much gone already, so no pics. These would be great mixed with pintos, but don’t add them until the pintos are almost done because they cook so fast (when soaked overnight).
