Looks great to me. I love omelets but have never been good at making them. My momma got it down though.

I like pace or the HEB variety of pace a lot. Its not green and its not unusual, but for a day in day out hot sauce salsa etc. whatever you want to call it I enjoy it. I find I like it better than I like a lot of homemade salsas and restaurants as well.

Cholula would have been my preference. other than that, would.

Homemade salsa or pico, Mateo's, Hell on the Red, Garcia's, anything but Pace. Hell on the red is probably my favorite jarred salsa.

Ha and I thought those were funny looking potatoes

Forgive me, had lasick cataract surgery on left eye this am, eyes were still kind of numb, thought those were potatoes as well, which would be fine also. Can see mushrooms in the pic of cooked ingredients now as well. Would any day of the week.

I would prefer potatoes over mushrooms but it still looked fantastic, Pace included.

x2. Almost looks like you put some cheese in the pan first then added the eggs to get that edge?

Spray the pan with oil, put the scrambled eggs in pan on med-high heat. While the eggs are cooking I will tilt the pan around to get the eggs to cook a little higher on the sides of the pan, once the eggs are close to being cooked I add the other stuff to one side with cheese on last. Take the spatula start releasing and folding the empty side over the loaded side. I then lower the heat and start working the spatula underneath to make sure it does stick then slide it to the middle of the pan to finish cooking it.

Pour in eggs over a hot skillet
Add ingredients
Add cheese
Attempt to fold and seal
Eat scrambled eggs.
