On Sunday after church the wife and I had 1/2 of a rotisserie chicken for dinner. I removed the meat from the bones on the 1/2 chicken we did not eat. I added the zest and juice from one lime, garlic powder, onion powder, cumin and chili powder to the meat and allowed the meat to marinade overnight.
Monday for dinner I attempted to make home made taquitos using the marinated chicken. I heated corn tortillas in my iron skillet to make them soft. Next I added some of marinated chicken to the tortillas. After rolling the taquitos I fried them until lightly browned.
Overall a simple and tasty dish.
