They track, listen and send that data someplace. That place..... no one seems to know.

My Pixel has great responses on my text messages and emails. I'm hoping it can cover for me at work someday.

Apple is the company that has fought the government twice that I can recall to not give them the steps to unlock their phones. You don't hear of google or amazon doing that...nothing is secure now-a-days but apple does a little better job than the rest on keeping your data....yours.

A little correction...

Make no mistake.... Apple does not care about users data, they care about their code. They don’t want to give the US Government the code on how to unlock phones because the US Government can not keep their lips closed. If the Apple code is released it would end Apples ability to protect their proprietary data.

Apple is happy to use, sell or give any data they have from their users. You just have to have a reason or the right amount of cash.

Typically when Apple or similar collect and even sell your data you have agreed to it. Remember those terms and conditions you hit accept on?

Those types of devices including Siri, listen to everything waiting on the wake words. The only record 10 seconds before you use a wake word, the active interface, ie. conversation, and 10 seconds after.

Do you use Live Photo’s on your apple phone? If you tap on the photo and hold it, it will show you everything that was recorded in that photo. Including audio.
You send that to someone else or post on the internet as a live image..... Guess what??? You just shared what the phone recorded during a 5 second span of what it was recording 2.5 sec before and 2.5 sec after you hit the shutter button. Video and audio.

While you think you have control over your data - as such laws and governing bodies such as FTC, FCC, GDPR, CPPA, COPPA etc will claim,
you might be unwillingly agreeing to opt-in and consent - whether that is on IoT, smart phones/tv's, location data etc. It is becoming increasingly more difficult to block data, voice, location and behavior capture. Sign of the time I guess.
