Made the rub and bbq sauce and smoked at 225 with hardwood pellets in my pellet smoker. Probably the best chicken I’ve ever had.

I have the Pitboss Pro that is exclusive to Lowe’s.


Set a timer for 90 minutes but just cooked until they were 165 in centers with meat probe. Then took them off. They did go a little bit over the 90 minute mark. 225 until 150 and then cranked it up to 300 until 165.

The chicken looks delicious....but that corn

If you had that corn you’d never want it any other way. Corn with mayo, salt, pepper, crumbled queso fresco cheese. Topped with smoked paprika, more queso fresco, and cilantro.

What’s in the sauce?

Recipe I found online but I added a few things to it.

2 cups ketchup
1/3 cup apple cider vinegar
1/3 cup brown sugar
2 tablespoons honey
1 1/2 tablespoons Worcestershire sauce
2 1/2 teaspoons smoked paprika
1 teaspoon dry mustard
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon hot sauce or more to taste

Things I added by feel I didn’t measure. Sriracha sauce, cumin, a little chili powder, liquid smoke. The original recipe was too sweet for me so I added the above ingredients and doubled the hot sauce in original recipe.
