Trying to get the wife and kiddo to eat more of the critters in my freezer. Wife's big thing at the moment is Keto so she showed me a recipe for keto sausage balls. I've done this recipe with venison breakfast sausage as well as 50/50 venison breakfast sausage and burger meat and every time they turn out fantastic. An excellent grab bag to take to the deer lease for a quick morning snack.

1 lb breakfast sausage
1 large egg
1 cup almond flour
8 oz shredded cheese
1/4 cup grated parmesan
1 tbsp butter or coconut oil
2 tsp baking powder
1/4 tsp salt

mix everything up, make your individual balls and pop in oven at 350 for 16-18 minutes [Linked Image]

My wife makes excellent sausage balls. We recently started adding fresh chopped japs and that really made them much better.

Been doing keto for about a year. If you get the urge to try anything new I would add a 4 ounces of cream cheese to that mix. Makes a big difference in flavor and texture and helps up the fat content, but there great without it too.

Just made these for lunch. I doubled the batch-you better have a large bowl! I added the cream cheese mentioned above and also added 3-4 TBSP of HVR Ranch powder. Holy smokes they turned out awesome! They did stick badly, though, due to the cheese, even though I liberally used nonstick spray. I’ll either use Teflon or glass next time. My wife ate them like mad!

you might give parchment paper a try to prevent sticking ... I had never used until a few years ago but now that is my go to for anything going into the oven on a cookie sheet

I’ll try it. I used foil with spray the first pan, then a sprayed pan in the second group.

We cook them in a cast iron skillet. Gives a nice crunchy bottom without sticking.
