this time a Green Bell Pepper with some leftover breakfast sausage from last week that had Jalapenos, Onions and shrooms in it, You can never have enough Jalapenos . It was pretty good but there is definitely some things I would do differently, one is to dice the potato with skin on and brown it in grease before stuffing, other is fry the eggs separately then place them in the pepper. Trial and error to get it just right

New stuffing to me. Would. I've made dozens when my garden was in but stuffed them hamburger and rice kinda like Spanish rice.

Egg looks perfect to me. Nice!

The egg yolk was okay, the problem is the white drains down into the ingredients below absorbing into them and distorts their flavor and texture.
If I cook the eggs separately with the whites firm and yolk running then add them to the Bell Pepper and other ingredients after they are cooked, I believe it will have a more robust flavor to it , same thing with dicing and pan frying the potatoes first

I'm not big on bell peppers except stuffed and baked ... those look really good

I love me some stuffed bell peppers, that egg takes it up a notch.
