Found a lot of these rocks in one area of the property and I'd like to know what they are (my wife would). They look like they have some crystalline structure to them. Some of the rocks have almost a "cap" of this orange/yellow crystal-like stuff on them. The crystal stuff easily flakes off, if that's any help. Thanks in advance for any help you can give.

We always called it Leaver Rite, when prospecting in Idaho and Arizona. "Leaver Right There" rocks, not worth picking up.

If you want a specific answer take a piece to the closest college to you and talk to someone in the Geology Department.

This. Quartz has a Mohs hardness scale value of 7. Gypsum has a Mohs hardness scale value of 2- barely harder than talc.
Quartz doesn't flake off, and the crystal structure is hexagonal, gypsum is prismatic.
