We do a wild game Christmas for my in-laws every year. It's fun to show them how versatile wild game is because they don't eat wild game or hunt. So far the few years we have done it have been a success. We have done pretty traditional German inspired Christmas dinners, but this year we decided to give a bit of a Mexican twist. I didn't get a picture until we started digging in.
This year we have dove tamales. Inspired by dove poppers. They're blue corn masa filled with dove, bacon, jalapeno, and cream cheese.
Empanadas filled with shredded duck cooked in chipotles and diced peaches.

Not pictured was a home cured wild hog ham and a whole roasted whitetail back strap.
It's always fun cooking for these people. The empamadas were definitely the biggest hit of the night.
