Black drum bite is always good in the colder months for me. Here's a great fresh recipe in always use for them. Drum makes an awesome raw fish for a ceviche


Recipe: Olive medley, parsley, cilantro, cherry tomatoes, chive, lemon and lime juice and of course, avocado. Season with salt, pepper and garlic powder. Marinade for 30 minutes and serve.

I love ceviche. I’ve made it with all kinds of fish. Fresh water or salt water, never bothered me if fresh and prepped right. I’ve had conch sitting alive on the cart next to me and on my plate 2 minutes later, love the stuff

I fished salt water for over 40 years. Caught a big black drum one time and didn't care for it. I caught a puppy drum later on a slow day and kept it. It was great. Same texture as a red. Loved them ever since.

Man that looks great Robert! Any slot sized drum makes excellent table fair. A lot of folks say to only use a firm fish for ceviche like black/red drum, sheepshead, snapper etc and yes they’re all good but I’ve made a whole lot of ceviche with trout & flounder too that is always good. Never had any issues with it falling apart. Love ceviche!

Hey I remember that trip! Good times...Paul did an excellent job on that ceviche. I had never had it with Corn Nuts before, that was really good.

Tell you what Sir, if you are ever on a spot inshore where you can snag a few Mangrove Snapper....they make the best ceviche of all IMO. They are good no matter how you cook them, but something about making ceviche with them.....hmn..
