Thanks it was very good, but room for improvement  Next time I am going to tweak it a little. Going to use Chives instead of diced Onions and lightly brown the potato meat with the other stuff. Also going to try a similar Potato concoction with Corned Beef Hash

Never cared for cornbeef hash but I'd hammer that....maybe a little diced fresh tomato and cilantro....

I take it the potato was already baked? I nuked it. I was thinking after I nuke the next one I can finish it off in the broiler for a couple of minutes to get the skin crispy? Also going to get a huge Potato next time and only use 1/2 of it with two eggs per half.
