Im going to be cooking A5 Wagyu steaks for Christmas. Ive never messed with wagyu before and the more I read on cooking it, Im getting nervous. Don't want to screw up these expensive steaks. I had originally planned to sous vide then sear like a regular steak but have read that's not recommended for wagyu as the fat melts at a much lower temp than regular steaks. Also, reading online, Im seeing all kinds of differing opinions on do and dont's. Im leaning towards just using a cast iron skillet and sear it on high heat about 2.5 minutes each side.
Id like some recommendation from people who have actually cooked wagyu themselves.

That should be fine. Just because it's wagyu doesn't mean it's all A5. A% should be very ell marbled. Just don't cook it beyond medium rare and you'll be all good. It's like any other steak, the more marbling the less time you need to cook it. Get ready for a real treat. Did you get ribeyes, strips or filets? The thickness of the steaks does factor into cooking time.

Ill post a picture when I get them in hand, my dad got them from somewhere. Ribeye for me, strips for everyone else. He said it was A5 Wagyu, Im hoping it is and not the American wagyu. Would still be a good steak if so, but Im REALLY looking forward to trying real A5 if it is indeed that.

I’ve cooked wagyu before not sure what grade but turned out fantastic. Started fire in my Weber, I used Grill Grates on top of the regular grates(check them out, really nice) 1 inch thick steaks Get grate temp up to 650ish Cover completely both sides of steak with Morton’s salt, let stand 10 minutes, wash off salt Lightly salt, pepper and very little steak seasoning of your choice With grates up to temp, make sure they’re clean, spray with Pam Throw on steak let set for 1:35 seconds and turn 90 degrees let set for 1:35 seconds Flip let set for 1:35 seconds then turn 90 degrees Now sprinkle with butter Check temp of steak pull off at 145 for medium and let set for 5 minutes Lot of work but it’s worth it Or youtube steak competition Good Luck

Well, I didn't bother with pictures. It was not A5 grade, it was marketside butcher Wagyu steaks. They basically looked like a usda prime steak, nothing like real A5 wagyu. So, I went ahead and cooked them sous vide and seared in a cast iron skillet. The fat did render quite a bit in the skillet very quickly so it was definitely a difference from the steaks I am used to cooking. IT was good, not great, Id rather just have the thick cut new York strip or ribeye I usually get.

I'm the same way. I usually just buy prime tenderloin. Wagyu is quite the marketing tool. It can run the same grades as any other beef you buy. I used to get A5 Wagyu at Whole Foods in Plano then they quit carrying it. Butcher said they had too much spoilage and it was costing them a lot. It came from a ranch down by Austin. The ranch was cut in half by the outer loop and the herd dispersed. Crying shame. Dang it was good. I'd love to find a reliable source. I tried Local Yocal in McKinney but it was barely prime and expensive. I really don't want to buy frozen so I haven't bought Allen Bros, but may give them a try. If anybody has some first hand experience with a good supplier, I'd love to know about it. Thanks for the report. Glad you enjoyed the meal.

Snake River Farms carries Wagyu. I’m not too sure about the grades, but they ship it frozen
