I was up at 4:30 today and had the meat on the offset by 6 A.M. It was windy and the temp. of the pit was hotter than what I normally cook at so I decided to go Hot and Fast for the first time. I pulled and wrapped in foil @165 and finished in the oven @ 300° till the internal temp reached 205-210 degrees(about 6 hours). I wrapped it in a towel and let it rest in an ice chest for 2 hours before slicing. It had a good smoke ring and the taste was really good. It was a 17 lb. brisket that was about 12+ lbs. after trimming when I put it on the smoker, so I would say that it takes about 30 minutes per lb.to fully cook.

Let's see a slice! I prefer wrapping in paper as it maintains the bark better. I've only cooked hot and fast once on accident and it turned out well. Need to work on perfecting it.

I did not slice the point because I plan on making burnt ends at a later date.
