This was a whole rib, dry aged by the local butcher....right at 18lbs. Seasoned and coated with butter, salt, pepper, garlic and herbs de Provence. We do this every year via the chef john’s perfect prime rib technique. Haven’t been disappointed yet.

Yes. Most butchers will trim all but a small piece attached to the rib cage....basically using the ribs as a roasting rack.
