Has anyone ever stocked up all there duck and goose meat all season and then mixed it with deer or hog meat to make sausage? Just curious of some ways to use up this waterfowl meat I'm getting besides the old standby of bacon wrapped.

I personally have not, but know that many make sausage out of goose.

I have ground it up and made jerky out of it.

Most years I save all my duck and goose, and anything else I have killed one or two of or anything still left in the freezer from the season and take the deboned meat to Kubys in Feb to have smoked and jalapeno cheese sausage made. We just call it an all game sausage as though it is mostly waterfowl, it could have squirrel, rabbit, dove, snipe, turkey, crane, hog and deer trimmings, and other odd game in it. This is the only way I can get other family members and friends to eat waterfowl and some of the other odd game and truly like it. I also have sausage made from venison alone. Believe it or not, everyone prefers the all game sausage over the venison sausage in home taste testing, but both are great either alone on the grill or in other dishes. Just bought a new freezer the other day for this very reason. It is also why I don' mind shooting divers and mergansers.

Thanks for the reply! This is exactly what my plan is for this year. I've got no problem stock piling waterfowl, now hopefully I can get a deer or a pig to mix it all with. I could probably get some squirrels easy enough!!! Glad to hear someone else does this and that it turns out good!!!
