Whats your favorite Venison smoked sausage recipe? I've been playing around with several recipes but cant seem to get it just right. Last time I have some made at Cox processing in Comanche it was great, trying to duplicate a texas smokehouse sausage.

I never really do it exactly the same, but close to equal parts salt, garlic, and pepper, with a little paprika and cayenne works for me. I make it, cook a little patty in a skillet and sample to see if I need to adjust.
