All boned out and on dry ice I'll cut her up later in the week. It's better aged 5-7 days.
Front shoulders and carcus meat will be hamburger with 30% pork shoulder. Hind quarters will be steaks & roasts, back straps and tender lions will also be steaks and a few roasts.
