I went to clear some hogs off of my uncle's stand this weekend end. Ended up with six and finally got one that would fit on my smoker. I've been wanting to try this for a while. This was also my first time scalding and scraping a pig. I learned a lot from that experience. Smoked it to about 190 degrees in the hams and shoulders. The smoking process was surprisingly easy and it came out juicy and tender. I'll definitely be doing this again.

Thanks, guys. I learned a lot by doing it. I didn't have a clue what I was doing going into it. I've never even eaten one this way. Do you typically eat the skin? The seasoning gave it a good flavor, but it's more chewy than crispy. The meat is great.

oh how I remember scalding and scrapping as a kid with my dad and uncles ... I swore skinning was easier than the amount of work involved and I hate skinning a hog ... looks good though!

My grandfather told me I should have wrapped it in a burlap sack to keep it warm. He said it helps keep the hair loose. It only took about 10 minutes to scrap one side and another 35 minutes to scrape the second side.

Might depend on your location. We are in thorn country, every animal I have skinned, deer, javalina, hogs, coyotes rabbits etc. has been literally covered by a layer of broke off thorns in and under the skin.

I wouldn't be apposed to skin on with a domestic hog, but I wouldn't chance it with the ones we have running round.

I used a 55 gallon barrel as well. I put it on a few bricks and built a fire around it until it got up to 160 and scaled it for 6 minutes. The hair came off really easy until it started cooking down.

It's easier and faster to burn the hair off than scrape them....
