A buddy took one yesterday. We cleaned and quartered it , there’s a lot of meat in coolers. He is going to take to a processor outside of Hondo. Have any of y’all eaten wildebeest? If so, please share your thoughts and possibly some recipes. Thanks.

I've heard it's good. Maybe a little tough. No need for any special cooking. Maybe low and slow.

I have had it a couple times at Game Warden Fund Raisers, Not bad, they had over cooked it but still not bad. I would say treat it like deer meat and you will be good,

That's a good point. If you don't want to waste meat start with something heavily seasoned and work your way down to steaks. Even meat that isn't great can make good chili, spaghetti sauce, or sloppy joe. We’ll know next week, picking it up on the way back out West. I think a big pot of chili will tell the tale. One more question...beans or no beans? I NEVER put beans in my chili. It makes the canned corn and baby carrots taste weird.
