Anyone here do this, not necessarily for the holidays but dry age beef for 40 plus days in the fridge?

put some cookie butter on them when you roast them.

Heck I did some prime strips uncovered for only 3 days and they were fantastic - not patient enough for 40
|

YES !!!!! really, I love dry aged beef, usually when I can splurge I'll get a 2" ribeye from Whole Foods. Its about $50 but OMG !!!!! Keep me posted on your system. Doesn't it need to be cool, humid with black-lights? something like this?

You should dry age at time of butcher Half carcass 21 days
Beef you bought at market have been soaked/injected with water so a longer drying period is needed
