Anyone here do this, not necessarily for the holidays but dry age beef for 40 plus days in the fridge?

It is amazing.

They key is patience.

really, I love dry aged beef, usually when I can splurge I'll get a 2" ribeye from Whole Foods. Its about $50 but OMG !!!!! Keep me posted on your system.
Doesn't it need to be cool, humid with black-lights? something like this?

You should dry age at time of butcher
Half carcass
21 days

Beef you bought at market have been soaked/injected with water so a longer
drying period is needed
