I work with a couple of guys that were discussing how they cook their chili. Both of them use deer meat(I do not) and add breakfast sausage as well. Both of them are pretty good cooks so when I made my first batch of chili this week I decided to follow their lead and give it a shot. I used 2 lb.s of ground brisket and 1 lb. of hot breakfast sausage. I will have to admit it was really good. I say NOT. A lot of the spice that are in the breakfast sausage are the same exact spices that we use in chili.

I use 3lbs venison and 1lb ground pork and results are great. I based my recipe on Emeril’s Tex mex venison chili recipe. All I can say is that man is a genius on spices. His recipe makes for a great bowl of chili!

Beans in Chili is sacrilege. You can use any kind of meat that you want.

I usually use 50/50 ground venison and venison breakfast sausage when I make chili.
The sausage helps to give enough fat for the lean venison.
