Venison Tex Mex chili and 1st try at keto Mexican Cornbread. Chili was excellent and cornbread was pretty good

Mexican Cornbread (keto)

2-1/2 cups almond flour (super fine)
2-1/2 cups shredded cheddar cheese
3-jalapeƱos, sliced & seeds removed
2-teaspoons baking powder
1/2-teaspoon salt
3-eggs
1/2-cup sour cream
1/4-cup grass fed butter, melted
2-cups diced onions

Preheat oven to 350f, place iron skillet in oven with 1 tablespoon olive or coconut oil to heat skillet
Mix dry ingredients together
Add remaining ingredients, mix well
Pour into heated iron skillet, shape as needed
Bake 15-20 min, NOTE it took 22 minutes in my oven
When top is golden brown, remove from oven and let stand 5-minutes
Cut into 12 slices

Each slice contains
Carbs, net - 5
Carbs, total - 8
Fiber - 3
Fat - 36
Protein - 19
Calories - 421

Very different recipe from what I grew up eating, but my wife and I liked it and plan on making it again
