Pork loin is just about the easiest meat to smoke. Rub it with a decent rub and brown sugar. I use Dr Pepper in place of water. Couple hours in a MES and a couple hours rest and its perfection. Just finished eating one I smoked a couple weeks ago. Makes great sandwiches.

About 155-160.
I let it smoke a little longer than I like, got busy doing chores.
I prefer it 145-150, but it still taste good and wasn’t dried out.

I usually take domestic pork to 145-150 and feral pork to 165-170

I stuff the Pork Loin with cream cheese and fresh Jalapeños and then wrap the loin in bacon, pretty tasty.

Probably.
Able to get more seasoning on them too.
Easier to handle, it was a big loin.
