I feel your pain 603. Have a daughter that's a vegetarian. We tend to make stuff like spaghetti, and then set aside a portion of the sauce for her before we add meat or meatballs. And I'll keep a large portobello mushroom, or fake meat burger in the fridge for when I'm grilling for the rest of the family.

Give her a loaded baked potato with fake bacon bits as her main course and y'all can all share a salad to get it started. The rest of your group can have rib-eye with the baked potatoes. No butter or sour cream for the vegans.

My company has a foreign Indian that designs machine shops for optimum work flow efficiency. I barbecued for the shop and he was there. Everyone knew he was a vegitarian and when I put the spread out I handed him a head of lettuce and said dig in. That got a big laugh. I then introduced him to The potato salad I had in the cooler. He had never eaten any and wanted me to write down how to make it. He was thrilled with the new dish.

Strange but for some reason I had a vegan meal today. It was a butternut squash bisque with a glob on sour cream on top. Man it was so good, I never would've thunk it

If I invite them, I would make accommodations for the Vegan. There are 2 types of Vegans, those that accept the fact it is not for everyone, and the pushy kind, the latter will be tolerated when necessary.

Just search a few recipes, there are tons on any search.
Everyone should try vegan once in a while, and vegetarian, try them all. Makes you appreciate what you like most.
The only way to appreciate good times is to have experienced bad times. Embrace the vegan, fix the whole meal based on vegan and all non vegans simply carry the burden for one meal. What an impact you will have on all. Besides, you can go full carnivore after he/she leaves.
Embrace differences, you may actually find something you enjoy.

As it turned out, it seems that they anticipated our concern on what to serve, so they suggested we go to their house to eat. Sure took the pressure off of us. But, the husband threw his back out badly and called us from the floor. We rescheduled for this coming Sunday.
I’m interested in what the guy cooks for her and for us. I’ll report back.
