When I first started aging duck there was not much info on the internet, now there is a ton of info, just go google it. But my favorite way is to breast them skin on pepper them up, put in big tupperware, lid lose on top, make one end higher so juice drains to one side, give it some love and flip once a day, don't let it dry out. Took this pic today BWT shot on Saturday, these are ready to eat they will be so good. up

Cool. Save that duck fat and render it if it's not orange. Good on mashed potatoes and green beens. Glad you got some teal. I cant remember who said it but,

Mr. Mallard and even Mr. King himself will sometimes cheat on you and partake of the invertebrates but Mr Pintail and Mr. Teal are faithful to the seed and will never let you down.

Yes. I’ll age them whole as well in the fridge, breast up. These sat in the fridge a couple days before I cleaned them, but that is not my preference. After couple days in the tupperware, the blood drains off..

I age mine with feathers on and guts in.
About 7 days in cooler then clean. Incredible difference in taste.

Grilled them last night on cast iron/gas grill, they were delish. My wife likes her's more done so they go on first, skin/fat side down.. You want to cook on fat side down as much as possible to render down that duck fat which will never be completely get done. But once you get that caramelizing going it is rocken. smile ani
