I’ve used a 6 basket model for a large fish fry. We would let run til about 350°, then run a couple sacrificial basket of fries to soak up some heat. It would level out, then get after cooking fish. We actually used 3 6 basket units. 2 for fish and one for most of the fries. And yes, it took a few hours to cool down. We would start dumping oil back in jugs at about 200° Cudos on the find, also be careful lighting on windy days.

A little side note. Your French fries will come out better if you fry them twice.

That’s a steal at $50. Just bought one. The sacrificial sack of frozen fries works for me on the 6 gallon model.

A little side note. Your French fries will come out better if you fry them twice. I like a double fry, but there is also a fine line of damn these are good to crap we made them too crispy.
