Grill marks are not over cooked. It was rare to med rare. Flaming up on sides was from the garlic olive oil. Could not finish it all.

I bought a Choice Bone In Rib Roast on sale and cut it into steaks. They were very tough, wish I knew I could bring it back.

That steak looks good. I'll have to try Tom Thumb again. I quit going when they sold out to Randalls and then Safeway acquired them. Quality really went down. I think they are part of Albertsons now. The flagship stores are supposed to be a little more upscale.

When they put Rib Eyes on sale for $4.99lb I usually load up. Never had an issue with their meat

To each their own, the garlic olive oil is so the steak will get a fire on it and seal in the juices. I let it flame for about 2 minutes per side as long as it is thick enough. Have to make sure your grill is over 500 degrees, though.

I know what you do with the sear. Looks good. I’ve always, right at the last minute, brush on real butter, the butter will flame up and sear on the fat, good good.
