Had a Brisket that I meant to cook quite a while back but mother nature did not co-operate, wife said save it for when Victoria comes home from school she loves BBQ.
So Saturday I smoked it and Sunday finished it off in the oven. Turned out pretty good, not my best effort but we have been enjoying it.
Had more hard fat than I expected but trimmed it out.
Rubbed and back into the fridge overnight.
