Where do you get your fat to add to game meat? I'm about to start trying to make my own sausages pretty soon. I've figured out the differences between the fat, but haven't really found a place to source it from.

Pork butts worked best for me. Make it 60 pork and 40 venison.

Thisisbeer, it has been harder to find straight fat since most local supermarkets don't butcher anymore. I have had the most luck shopping at stores that cater to the Hispanic/ethnic food markets, if you can find one in your area. For most ground sausages, pork butt will suffice, but if you are making salami or summer sausage or the like, something that needs the marbled pork fat, you will need to locate a source. It is getting harder.

You can get pork belly at the Asian market, but not for cheap.

You can get pork belly at the Asian market, but not for cheap. Think I saw pork belly's last time I was in Walmart, might have been Sams. Try the local Mexican meat market, they should have what you need.

We use pork butts. I have seldomly come across straight pork fat at a few HEBs but they want as much for the fat as they do for a pork butt. Never had issue with the pork buts and they are more commonly available at a decent price.

I used to have a friend that was a butcher that saved fat for me. My next choice and preferred method now is adding pork butts. Buy extras when it goes on sale.

I buy my fat at a local butcher shop Hirschs in Plano, I bet your local butcher carries it also, good luck!

Find a butcher shop or processor in your area that makes their own sausage. They will have everything you need, tons of knowledge, and are usually very happy to help. I get “pork trimmings” when we make. The “pork trimmings” are deboned pork picnics with the forearm muscles. They come directly from the packer in 60 lb boxes and have plenty of fat. I go 60% pork to 40% venison for the cooking sausage and 40% pork to 60% venison for the dried. The local butcher should also carry fresh wet casings which are far superior to the dried ones imo. The fresh casings come in different sizes as well (smaller for dried and bigger for cooking sausage). Pork butts also work very well and go on sale at times. I just don’t have freezer space to stack a supply when they go on sale - so the trimmings route works better for my needs.

Been using "bacon ends and pieces" from wal-mart, for bfast sausage, I use 60venison to 40 pork okiehuntr
