Asked for a couple recipes last week and decided to try my take on a couple of them. I had two tenderloins left and tried them two different ways... First up was the classic bacon wrapped, stuffed with cream cheese and minced garlic. Normally would toss jalapeños in there, but wanted to keep it mild for all to enjoy. Cooked at 350 for 15 mins a side and then sprinkled with brown sugar and broiled each side. Next time will cook at a lower temp or less time...just a bit. Hard to balance the proper venison temp vs. bacon. Second up was a sous vide tender. Sous vide set at 129 for 1.5 hours. Had Luling BBQ Sauce, garlic and salt and pepper in the bag. Took it out, patted it dry, and lightly seasoned with garlic salt and steak seasoning. Got some hot avocado oil and butter and seared each side for 45 seconds. Made a chimichurri sauce for the first time and was rather pleased with how that turned out. Thanks for the suggestions!

They both look awesome! Hopefully, they tasted just as good. I'm glad the chimichurri sauce came out well.

Looks dang good! I have done the Sous Vide on venison tenders and ham steaks also. Always turned out great.
Are idiots multiplying faster than normal people?

A tip for the bacon vs any meat temperatures, I always cook the bacon on an open flame to get the char started then move to the side. Wild game can be tricky to get cooked right when wrappe din bacon due to the low fat content. This is why I don't like bacon wrapped dove breasts, I prefer my dove meat a little red on the inside.

Good idea...I was thinking of pre-baking them a bit first so I could get similar results.

Looks great!
I made some venison kabobs a few weeks ago using ham steak (top/bottom round) wrapped in bacon with onion and bell pepper. I also had a hard time getting the bacon done enough and the venison not over done. Making a second go of the same tonight for dinner and im going to partially cook the bacon before wrapping and hope that helps.
