Wanted to do something a little different tonight so seared some Ahi Tuna, roasted some potatoes, and made a little Asian salad. Turned out very good and a great break to the steak, chicken, or pork we normally have.

FWIW "most" tuna we buy here is frozen or "previously" frozen. Just travels better and as long as you NEVER re-freeze fish, you're GTG.

There are some place to get really fresh, never frozen, but its usually at a fish market. ALWAYS ask !!!

First time I had seared Ahi tuna was at a Fish Bones Rest. in Denver CO. No one told me the green stuff was not Japanese guacamole roflmao

The people I worked for built a home on the Big Island in Hawaii. We were going back and forth between there and San Francisco probably once a month for close to 2 years. We always got Seared Ahi for the trip back. Very good eating. Even better because it was fresh and we charged it to the airplane.

Did the same yesterday. Made a pot of green beans w new potatoes then fired up the CI griddle. Seared a piece of Ahi beside fresh asparagus. There were no leftovers.

Looks great. Best tuna I ever had was on a sandwich in Eureka Springs. Mango chutney. Goodness.
