Bleed it out as soon as it is caught to get the acid out. I have had it grilled before and it was not bad as all.

This...hang it by the head and cut the tail off and let it bleed out for an hour or so.... We do our large (60#-130#) flatheads the same way….after its bleed out start carving into steaks...and putting on ice of vacuum seal and freeze...

Put shark steaks in bowl with salt water, ice and a pinch of baking soda. Keep icy cold for about an hour or so then rinse well. Rub well with lemon pepper. Grill steaks while brushing with warm garlic butter. About 15-20min on hot grill If it’s a bull shark forget all the above and turn it loose. Blacktips are by far the best.

Blacktips are very good grilled . As stated bleed them out . I cut the main veins going into the tail as soon as they hit the beach . Over 3 foot cut them into steaks , trim off skin . Melted butter and Cajun seasoning . Hot grill , do not over cook . Really good if you do it right . Bonnet heads as also good , have a " crabby " taste as that is part of their diet .

Yeah, if you can get past the fact that you are eating something that could eat you, it is very good grilled.

Love grilled Blacktip steaks. Soak them in milk over night and cook them on a hot grill with some good seafood seasoning.
You should have been here yesterday!
