If you make two knives that are identical except for the final working bevel angle (the part of the blade which does the actual cutting) and one is beveled at 40+ degrees and the other at 24 degrees. Which knife will have superior performance when cutting through wood, meat and other substances that you would normally use an every day carry knife to cut through? What do you believe the working bevel angle of your knife is? Mine is 40* and yours is 48*. Does that mean that I win?

Please correct me if I am wrong, but it appears that your knives have a bevel on both sides and not a single sided scandi grind. Do you grind your knives only on one side to a true 24 degree bevel as stated, or does this picture show a two sided bevel that would make them a 48 degree bevel at the cutting edge? My knives are beveled at 12 degrees/side which produce a working bevel of 24 degrees - about half the working bevel of the vast majority of knives out there. A Scandi bevel is never beveled on a single side because that would be called a chisel grind. A Scandi bevel is also beveled 12-13 degrees/ side. The inclusive or working bevel of the knives I make are 24 degrees and that's about 1/2 the angle of all the knives being discussed on this forum. When you figure out why there are so many knives made with such steep working bevels, please let us all know Thanks for discussing what is arguably the most significant element of knife performance that few people pay any attention to. Thanks for clarifying. I need to figure out how to get a consistent measurable angle on a hollow grind. I'm just guessing on my hollow grind angles.
