My knives are beveled at 12 degrees/side which produce a working bevel of 24 degrees - about half the working bevel of the vast majority of knives out there. A Scandi bevel is never beveled on a single side because that would be called a chisel grind. A Scandi bevel is also beveled 12-13 degrees/ side.

The inclusive or working bevel of the knives I make are 24 degrees and that's about 1/2 the angle of all the knives being discussed on this forum. When you figure out why there are so many knives made with such steep working bevels, please let us all know banana

Thanks for discussing what is arguably the most significant element of knife performance that few people pay any attention to.

Thanks for clarifying. I need to figure out how to get a consistent measurable angle on a hollow grind. I'm just guessing on my hollow grind angles.
