I use a brand called The Olive Tap, it’s almost as thick as syrup, so easy to eat with just bread.

Showed this to my personal shopper. Wasn't this what you used on the salmon when I stayed there last summer? Awesome stuff.

It's great to add to gravies such as pot roast gravy.

I use it as marinade for chicken and pork chops and greatly prefer it to Italian dressing.

Just use a good balsamic vinegar, and to make a glaze mix a little raspberry preserves in and reduce it.

Yes. This stuff is a syrup texture and the taste is better than any other ballsalmic glaze I have tried.

This glaze is different than the a liquid.

Cast, I did exactly that to cook my duck breast in. I used a raspberry chipotle sauce. It turns out great.

In Dripping Springs there is a fledgling Olive oil company called the Texas Olive Oil Company. Not only do they sale Olive oil produced from Texas olives they also sell various flavored balsamic vinegar.

My favorite salad dressing used to be Thousand Islands. Now days I just pour the lemon flavored balsamic vinegar onto my salad. That makes some delicious dressing. My wife uses fig flavored on her salads.

Some of them are high dollar. I remember watching a cooking show called frugal gourmet years ago. They had some on there selling for over $100 per ounce.

Seems the older some things get the more expensive they get. There are several folks on this forum that are getting to the pricey stage!!
