Tonight my wife and I tried a new version of pulled pork tacos. I used a spice blend from south of the border called achiote. https://www.saveur.com/article/recipes/achiote-pulled-pork-tacos/ I modified the recipe above in an effort to not overcook for just the wife and me. I still cooked too much, so I called a couple of neighbors over and fed them a meal. Looks awesome. I'm a HUGE fan of achiote, one of my all time favorite seasonings. I prefer the achiote paste (found at carnicerias), and like to cut my paste with a little vinegar to make a marinade for pork/chicken/certain cuts of beef. Good stuff!
