Jerky from Ground Venison?

I have an abundance of ground venison and figured I would use it to make jerky. That would work, right?

my dad used to do that all the time using one of the jerky guns like you can buy at Academy. Does your ground venison have any added fat or other meat or just straight venison??? I think you will need some kind of a binder if straight venison.
dad used to mix all of the dry spices in a bowl based on size of batch he was making, put meat in a large bowl, add spice mix, then a little bit of Worcestershire & liquid smoke and mix well. Feed into the jerky fun and squirt out onto his dehydrator trays. I was very skeptical but it usually came out very good

Try to find a deer bacon recipe. I believe you build sort of a meatloaf, smoke it, then slice it.. I havent tried making it yet but planning to do the same.

A buddy of mine makes his jerky like that, I am not a huge fan of that style of jerky, it's more of a texture thing for me.

we use ground venison in all our dishes that call for hamburger ... spaghetti, meatloaf, chopped steak, casseroles, etc. We will even brown a pound at a time, then put in zip lock bags or vacuum seal to have a quick 1 lb package ready to add into something for a quick dish...

I've been told that the fat might be a problem but I agree with your assessment. I'll know in a few days!

I've done it a couple of times using Hi Mountain seasoning/cure and straight venison, and it did not need a binder. I would be concerned about the added beef fat. It turned out awesome and was still chewy like jerky should be.

I make it out of ground venison a lot, but NO FAT !! I make sure to really clean up the meat first, and then grind it up. I add a little water with seasoning mixed with it and let it sit in the fridge overnight. The next day I shoot it through a jerky gun into strips and dry it for 8 hrs. in my dehydrator. Using the ground meat makes the whole thing a lot easier to chew up for an old man ! If fat is added, it can turn rancid on you.....

No problem.....just leave the temp low and the door opened a little to let the moisture escape. The whole thing about jerky, is you are not cooking it...just drying out the meat to keep it from spoiling.

I weigh 5 lb.and freeze in a freezer bag because that is what the mix will season at one time.. I have a Cabela`s grinder and do my own processing.
