Smoked my first whole brisket today and it out pretty nice. But it was pretty tender. I think it would have been better if I could have put it in a cooler for several hours before serving.

Not sure I want to know where you got the brisket. Maybe a patient that wouldn't pay? I ruined a few briskets before I was happy with one. I don't wrap my briskets unless I need to speed up the cook. Cook to an internal temp of about 200-205, let it rest for 2 hrs then slice against the grain. I've seen many briskets ruined but slicing the wrong way.

Couple of questions. Did you rub the meat with any kind of cooking oil before seasoning? Did you cook it fat side up? What was the cooking temp?
