Every few weeks my wife and I have a breakfast type meal for dinner.

Tonight we had a spicy link sausage, onion, and fried cubed potato fritatta. My wife added cheese to her serving. Both of us topped the dish with salsa.

Ingredients
1/2 of a jalapeno link sausage. I purchased mine at Bellville Meat Market. They sell some good stuff.
1/2 medium onion sliced thinly
1 medium size potato diced into small pieces

Cook the above ingredients until done. Avoid adding raw items to the frittata.

Preheat the oven to 350 degrees Farhenheit.

5 eggs scrambled with about 1/4 cup milk.

Add the egg/milk mixture to the cooked ingredients.

Cook the dish on the stovetop for 2-3 minutes. Place the dish in oven and cook for about 15 minute or until the center is set. I used an 8 iron inch skillet. A bigger skillet would be thinner and cook faster.
