Picked up some peaches at roadside stand north of stephenville today. Need a good recipe for cobbler, wife says she doesn’t have one.

I don't make peach cobblers. I do make peach pies.

I have used this recipe several times. It makes a great pie. And YES do add the cayenne pepper. I don't do the lattice weave on the top. I just use a knife to cut slits, holes, or designs on the top.

Not cobbler but sometimes I wrap them individually in foil with a little butter and cinnamon, grill til done and then top with some greek yogurt. Big bit with the Mrs.

Its hard to beat peach cobbler or pie though.

Notice the vanilla ice cream on the plate? That’s how I like to eat mine.

EASY PEACH COBBLER

1 CUP MILK
1 CUP SELF RISING FLOUR
1 CUP SUGAR
2 CANS PEACHES (you can just eyeball it with fresh peaches)

Spray bottom of 8" x 8" pan (I use Pyrex) with pam
mix 1st 3 ingredients in bowl and pour in pan / dish
dump the peaches in
Cook for about 45 minutes at tree fiddy

One thing I should mention is, when doing this with canned peaches, I use the juice so I would keep an eye on it to make sure it doesn't burn easy or something without it. could also add a little karo syrup too.

Been using that one since the 80s, Works with apples or peaches, but I do add a little cinnamon

Wife says the recipe she found is pretty close to this one. Butter in the bottom instead of Pam spray. She uses regular flour and adds baking powder to make it self rising flour. Also the peaches get cooked with some sugar on the stove before adding to mixture.

Yeah, I do the stick of butter usually too. But last time I used pam and it worked great too.

Double layer cobbler

12 peaches peeled and sliced
2 cups sugar
1 stick butter
Cinnamon sugar with nutmeg mixed in
1 cup water
2 premade pie crust
1 tsp cinnamon

Put peaches, water, sugar, 1/2 stick butter and cinnamon in saucepan.
Bring to boil and then simmer for 15-20 min

Pour 1/2 of mixture in 13x9 Pyrex dish or something of similar size that has been coated with butter.
Place 1 piecrust on top, coat with melted butter and sprinkle with cinnamon sugar nutmeg mix.
Bake for 20 min @ 375 or until crust is golden brown.

Pull out of oven, pour remaining mixture over top and place remaining piecrust on top. Brush on melted butter and sprinkle with more cinnamon sugar nutmeg mix. Bake @ 375 for another 35-40 min.

Electric. came in yesterday. Makes 1 gallon at a time. I haven't made homemade ice cream in 35 years. Can't wait. I just got the $35 Hamilton Beach brand
