I had the Piranta for years and lost it just resently. So ordered a new one today and went with the Baracuta. It is a bigger knife, takes bigger blades. There are 3 flavors, but they are all the same, just different colors, and come with different blades. They 3 type blades, 1 for fillet, 1 more for hunting (best for duck), and the other is a saw blade for bone. I got the both fillet and hunting blade and knife, just ordered today.

If you want to go cheap, get the Piranta. They take scalpel surgeon blades you can buy for dirt cheap.

You can use your hands, but you waist the tenders. And I like to cut out the arteries and the thick silver membrane around it, makes a big difference. And I also like to keep the skin on. Good luck doing all that with your hands.
