two identical knives, one would sharpen and hold an edge, the other could never get a decent edge, tried many systems, the I got my diamond out and in just a few strokes fantastic edge, and is staying sharp

I like the OLD " Chicago cutlery" knives for the kitchen, the two mentioned same # ect, bought both used, would this make a difference?
