Thanks to others on here sharing their bacon recipes (BuckRage) and stumbling across some pork bellies at HEB, im giving bacon a go! Got it vacuum packed in the curing salt, kosher salt, and brown sugar... minimum of 6 more days before I can smoke it might drive me muyloco

It's addictive and you will have a hard time going back to store bought bacon. Especially once you start experimenting with woods and different spices. Highly recommend smoking it with apple or cherry, maple wood is on my list to try next. Any spices you want to flavor it do it after the cure.

I have thought about trying to make Canadian bacon, but so far I have resisted the temptation.

It was a last minute rush to get it in the fridge last night at 10:30 after getting the kids in bed etc. ill have to try and get some pics of the process.

Not sure what im going to smoke it with, will take suggestions for sure, but more than likely mesquite pecan or oak. Ive got a couple truck loads of good mesquite so its high on the list lol. Also have some pear trees that have been in the ground 3 years with zero fruit... so maybe pear.

I use hickory and apple chunks/chips along with green live oak (inch to inch and a half thick, fresh cut limbs with leaves stripped off). About equal parts of each. Turns out great. Same for when I make hams. Be sure to get the internal temps of the bellies up to 135-140 during the smoke or the fat will be kinda sloppy when you go to slice it. Chill them in the fridge at least over night before you slice them.

I started some Canadian bacon last week. I will smoke it next weekend. I used a recipe I found that had brown sugar, salt, water, pink salt, pickling spice, and I added maple syrup (from Vermont). It is a wet cure.

Wonder what the difference in bacon/Canadian bacon is, sounds pretty similar to what I did with mine so far.

They are right! Have fun with it! But be warned, once the word gets out that you make your own bacon, your relatives will come out of the woodwork like you won the lottery! I like to use a pork butt. It makes more for the money and has a lot less fat. Enjoy your bacon bud!

Well let it cure for 10 days vaccum packed in the fridge. Rinsed in cold water sliced a piece and fried and it was good salt wise so started smoking.... It was pouring outside so instead of standing in the rain starting the smoker I improvised and put the belly on one end of my gas grill and put a soaked piece of mesquite on the other end. Worked well, produced a light smoke and good low temp.

Slice and first cook this morning, was really good, the thinner I sliced it the more I liked it. I like the mesquite smoke on it , it is a very light smoke if I would have been heavy like a brisket I don’t think I would like that.
