Tonight my wife and I made breakfast for supper. Eggs, bacon and a German Pancake or Dutch Baby.

The Dutch Baby is essentially a Pancake/French Toast combination baked in the oven. Often when I make this dish I will add some fresh fruit to the skillet before I bake the dish. Tonight's fruit of choice was blueberries.

I vary the size of the iron skillet according to how many eggs I use in the recipe. Don't forget to preheat the skillet in the oven as the oven is heating up.

looks great! My mother used to make something like that, don't recall if it had a name or not... she made various different flavors with fresh or canned fruit ... and sometimes would also brown sausage and/or bacon along with hashbrown potatoes.

Red Chevy --- as far as toppings to use think to each his own. My wife uses powdered sugar. My son uses Apple butter. My daughter uses syrup.....

Snake Wrangler--- in a 10 inch skillet last night using 6 eggs the Dutch Baby was about 1.75 to 2 inches thick after collapsing. The pancake collapes a bit as it cools.

Last night I did not take a plated view. I was too busy eating...... My bad. The link in the original post show a cut side view.

PMK---it sounds like your mother made a frittata. Instead of adding savory items like sausage and potatoes the addition of cinnamon and vanilla made the Dutch Baby more like a desert.

The link below provides some basic frittata ideas as well as some ideas on what to add to the dish. My favorite frittata is cheese, cooked sausage, cooked hashbrowns/diced potatoes, and onions that have been cooked a bit in my skillet. I top everything with a good salsa or home made rancheros sauce.

Looks great! I made my first Dutch Baby last weekend, and another & another lol. Good stuff. The recipes I’ve tried so far, they are all thin after they collapse. We must be using different recipes.

we had never heard of a frittata back in those days ... LOL ... it was pretty much whatever she had on hand whether fruit or meat/potato ...

My wife makes those German pancakes for the grandkids. Serves it with syrup and a good shaker of powdered sugar. Makes it look like it has been snowed on.
