It’s may not be a trophy Oryx to some but it’s a giant to me.

Let us know how the meat is.

I've shot three scimitar-horned oryx but the meat from the last one was so tough and chewy (no matter how I prepared it), I threw it out.

Really the one I killed an old bull was great, definetly cant cook it past medium

I didn't overcook it. It was tough and chewy, even at rare.

Congrats on your bull. He's one to be proud of. Mine tasted so-so as well. The flavor was fine, just tough. If he's tough, just have him ground with 20% brisket and all will be right in the world.
