They are great. Been doing the cold smoke method for a while now, really changes the flavor and tenderness of the steaks.

I usually do 30-45 mins at 150-160 but that is about the lowest I can get my traeger to go. Then over to the grill grates on my gas grill as hot as I can get it (like 600-700 degrees) and sear on each side 2-3 mins per side depending on the thickness of the steaks and how well done you want it. My dad uses a smoke tube like this instead of firing up the traeger and gets fantastic results as well. He goes for at least an hour using it since it is at a much colder temp.

What is the desired result from cold smoking as apposed to just going straight to the hot as you can get it sear for a minute to two per side?

Smoke flavor of the traeger, cooking it hot/fast for more tenderness with the gas grill by doing a reverse sear.

Yep. Gets you a smoke flavor but a bigger cut like that cooks better on the high heat when searing it.

yep, this is how I do most of my steaks in my offset smoker. season and put in vertical smoker running 150ish for 45 minutes to an hour depending on the thickness and cut of steaks. If I am using a thermometer, smoke until internal temp reaches about 130-135, then transfer to directly over the hot coals for a couple minutes per side ... comes out perfect medium rare. I leave my wife's on grill a few minutes longer as she prefers her steaks medium.
